Yields 1 serving
- 1 slice gluten free bread (if using wheat make sure it’s something whole grain with high fiber like Dave’s Killer Bread)
- 1/4-1/2 of an avocado
- 1-2 eggs
- 1 tsp. olive oil for cooking
- Himalayan sea salt and black pepper
Toast bread, heat olive oil in skillet over medium heat. Cook eggs until yolk is desired consistency (or hard/soft boil the eggs instead). Mash the avocado with a fork, spread onto the toast, and top with eggs and a pinch of sea salt and pepper. That’s all!!
