White Bean Salad

Yields 2 servings

  • 15 oz. can Great Northern Beans, drained and rinsed
  • 1 small lime, juiced (1 1/2 tbsp.)
  • 2 tbsp. olive oil
  • 1/2 tbsp. minced garlic
  • 1/4 cup diced green peppers, fresh or frozen
  • 1/4 cup diced white onions, fresh or frozen
  • 1 tsp. dried parsley
  • 1 tsp. dried oregano
  • 1/2 tsp. dried marjoram leaves
  • 1/4 tsp. dried lemon peel
  • Himalayan sea salt and pepper to taste

Rinse and drain beans (once bubbles dissipate while rinsing, you have removed excess sodium). In a small bowl mix together olive oil, lime juice, garlic, parsley, oregano, marjoram leaves, lemon peel, salt and pepper until well blended. Add beans, onion, and peppers, mix thoroughly. Place in refrigerator to marinate for 30 minutes before serving.
