Thai Peanut Sauce

yields about 2 cups

  • 1/2 cup natural peanut butter
  • 2 tbsp low sodium soy sauce
  • 2 tsp rice vinegar
  • 1 1/2 tsp ground ginger
  • 1 tbsp Sriracha
  • 1 tsp garlic powder
  • 1 tbsp honey
  • 2/3 cup full-fat coconut milk

In a small saucepan, whisk together the peanut butter, soy sauce, ginger, garlic, vinegar, Sriracha, and honey. Whisk in coconut milk last. Heat over medium-low for 1-2 minutes, adding more coconut milk as needed if the sauce becomes too thick. The sauce should drip steadily off of a spoon. Use as a dipping sauce for raw vegetables, salad dressing, or for lettuce wraps.
