Sausage Stir-Fry Breakfast

Yields 2 servings 

  • ½ cup onion, diced
  • ½ lb. mild Italian sausage, ground or sliced (nitrate/nitrite free)
  • 4 cups organic spinach or kale
  • Optional: Top with 1-2 eggs over easy.

Heat skillet on medium heat. Add diced onions, sauté until soft.  Then add sausage and cook until browned. Lastly, add greens, reduce heat to medium-low and cover, cook until greens are wilted and soft.
