Yields 2 servings
- ½ cup onion, diced
- ½ lb. mild Italian sausage, ground or sliced (nitrate/nitrite free)
- 4 cups organic spinach or kale
- Optional: Top with 1-2 eggs over easy.
Heat skillet on medium heat. Add diced onions, sauté until soft. Then add sausage and cook until browned. Lastly, add greens, reduce heat to medium-low and cover, cook until greens are wilted and soft.
