Pumpkin Pancakes

Yields 10 pancakes

  • 1 cup rolled oats, ground into fine powder
  • 1 cup pumpkin puree
  • 1/2 cup Greek yogurt plain
  • 1/2 tbsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ginger
  • 1/2 tsp. baking powder
  • 2 eggs
  • 3 tbsp. vanilla extract
  • ¼ cup almond milk
  • 2 tbsp. coconut oil for cooking

Instructions:

Grind the oats into flour using a food processor or powerful blender (I used my Vitamix), mix the oats, baking powder, and spices together. In a separate bowl, mix together all other ingredients (not oil). Combine the wet and dry ingredients and mix well. Heat 1 tbsp. of coconut oil in a non-stick skillet, and using a 1/4 cup measure pour pancake batter into the skillet and cook for 2-3 minutes each side. Serve with no sugar-added apple butter and enjoy!
