Mini Meat Loaves

Mini Meat loaves

Makes 8-9 mini’s, 2 mini’s is 1 serving

  • 1 lb. grass fed ground sirloin
  • 1/3 cup onion, chopped (I used frozen)
  • 1/3 cup green bell pepper, chopped (I used frozen)
  • 1/4 cup Parmesan cheese
  • 1/2 tsp Italian seasoning
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon chili powder
  • ½ tsp garlic powder
  • 3/4 teaspoon kosher salt
  • 1 egg

Sauce:

  • 1/4 cup ketchup
  • 1 tbsp. Sriracha Sauce
  • 1/2 teaspoon ground cumin
  • 1 tsp. Worcestershire sauce

Preheat oven to 350 degrees. In medium bowl combine beef, onion, green bell pepper, Parmesan cheese, Italian seasoning, black pepper, cayenne pepper, chili powder, garlic powder, salt and egg, mixing thoroughly until all ingredients are evenly blended.  In separate small bowl  mix ketchup, Sriracha Sauce, cumin, and Worcestershire Sauce until well blended, set aside. Divide mixture into approximately ½ serving and pack into silicone muffin holder or regular muffin tin. Pack mixture down pressing a slight indention into the center of each mini meatloaf. Add ½ tbsp. of sauce to the top of each mini meatloaf and spread to the sides. Bake in oven for 20 minutes. Remove from muffin holder and serve.
