Mango Salsa

 

yields 4 cups

  • 2 large mangoes, peeled, pitted and finely diced
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 1 medium lime, juiced
  • 1 tbsp fresh cilantro, minced
  • Himalayan sea salt to taste

Combine mangoes, red bell pepper, red onion, lime juice, cilantro, and sea salt. Refrigerate for a least 30 minutes before serving. Beanitos are a good chip option!
