yields 2 cloud eggs
- 2 cage-free organic eggs, separated
- 2 green onions, sliced thin
- Himalayan sea salt and pepper to taste
Preheat the oven to 400 degrees. Separate the egg whites from the yolks, saving the yolks aside. Whisk egg whites until they forms white foamy peaks. Cover a baking sheet with parchment paper. Place egg white on top of parchment paper, drawing a circular shape. Bake for 3 minutes, remove from the oven, and place yolk in the middle of the egg white “cloud”. Bake for another 3 minutes, remove from heat and season with salt, pepper and green onion. Enjoy by itself or on top of a piece of toast with mashed avocado!
