Curried Mushroom, Green Beans and Rice

Curried Mushrooms, Green Beans and Rice

Yields 4 servings (1/2 cup servings)

  • 1 tbsp. olive oil
  • 8 oz. Baby Portobello mushrooms, sliced
  • 1 medium onion, chopped
  • 1 tbsp. garlic, minced
  • 1 tsp. curry powder
  • 1 tsp. cumin
  • 1 cup coconut milk
  • 1 cup frozen green beans
  • ½ cup uncooked Basmati rice
  • 4 slices of cooked bacon
  • Salt and pepper to taste

Heat olive oil in medium size skillet on medium-high heat; add mushrooms, onion, and garlic. Stir occasionally and cook until onions are translucent. Add curry, cumin, and coconut milk, bring to a boil. Stir in green beans and rice, cover and reduce heat to low.  Simmer mixture until rice is tender and moisture is absorbed. Crumble and add bacon to rice mixture and season with salt and pepper to taste.
