- 1 cup creamy natural almond butter
- 1 1/2 cups unsweetened shredded coconut, divided
- 1 tsp vanilla extract
- 1 tbsp coconut oil
- Himalayan sea salt
Combine almond butter, coconut oil, vanilla, and 1 cup of the shredded coconut in an electric mixer or with a hand mixer. Place mixture in the freezer to let it set. Mix together the rest of the coconut flakes and a pinch of sea salt, and spread onto a plate. Use a tablespoon scooper to scoop out the almond butter mixture into a ball, and roll it in the sea salt and coconut, coating evenly. Serve immediately and store remaining bites in the refrigerator or freezer.
