Bacon Wrapped Jalapeno Bites

yields 16 bite-sized pieces

  • 8 jalapeno peppers
  • 1 lb organic, grass-fed 85% ground beef
  • 1 lb uncured nitrate/nitrite free bacon
  • 1/4 cup shredded Monterrey colby jack cheese
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 2 tsp garlic powder
  • 1/4 tsp sea salt
  • optional: Weber Spicy Chipotle seasoning to taste

Preheat the oven to 375 degrees. Slice jalapenos in half and remove seeds. Place on a baking sheet lined with parchment paper and set aside. Brown meat in a skillet and add the seasonings with 1/4 cup of water. When the water cooks down and the sauce thickens, spoon some of the beef mixture into each jalapeno. Wrap each one with a piece of bacon and use toothpicks to secure if necessary. Bake for 20 minutes or until bacon is crispy. Sprinkle with cheese and return to the oven for 2 minutes. Serve immediately.
