Twice Baked Garlic Cauliflower Mash
Makes 4-6 1/2 cup servings

- 1 large head of cauliflower,
- 2 tbsp Kerrygold butter
- 2 ounces of full fat cream cheese, softened
- 1 tsp garlic powder
- 1/2 tsp. Himalayan sea salt
- 1/4 tsp ground black pepper
- 1/3 cup Monterrey Jack shredded cheese
- chopped green onions for garnish
Preheat oven to 400 degrees. Clean and cut cauliflower into small pieces. Bring a large pot of water to a boil over high heat. Add cauliflower pieces to the pot and boil for 6 minutes, or until well done. Drain well, pat with paper towels to remove excess water. Transfer cauliflower into a food processor or blender, add butter, cream cheese, garlic powder, sea salt, and pepper, mix until well blended and mixture is smooth and creamy. Transfer mixture into a baking dish, sprinkle with cheese and bake until cheese is melted. Top with chopped green onions if desired for garnish.
